Soothing Carrot Ginger Soup

I love this soup. It has such a calming and gentle effect on my body. They served it one day on my retreat with Kat Colla & Desiree Pais at Xinalani and I couldn’t get enough of it.

That week, I took a cooking class with the super-talented chef and I begged him for the recipe. I’m kidding, I asked once and he happily gave it to me. But I would have begged for you guys!

Chef doesn’t believe in cooking dishes for a long time so you’ll be enjoying this soup within the hour!


Serves 4
Cook time 1/2 hour



  • 3 carrots
  • 1/4 cup onion
  • 2 garlic cloves
  • 3/4 – 1 cup fresh ginger
  • Avocado oil (or you can use EVOO, or coconut oil)
  • 1 pot



  • Lightly pan-fry ingredients in pot
  • Add 2.5 cups of water or broth of your choice
  • Bring to a boil
  • Cook for 10 mins
  • Blend and season as needed

*SWM Tip // add cilantro and green onions when serving for the additional nutritional value and flavor // add your favorite herb like astragalus root powder or superfoods at the very end // feel free to add any pre-cooked veggies to the soup to make it a bit more hearty
