That week, I took a cooking class with the super-talented chef and I begged him for the recipe. I’m kidding, I asked once and he happily gave it to me. But I would have begged for you guys!
Chef doesn’t believe in cooking dishes for a long time so you’ll be enjoying this soup within the hour!
Cook time 1/2 hour
- 3 carrots
- 1/4 cup onion
- 2 garlic cloves
- 3/4 – 1 cup fresh ginger
- Avocado oil (or you can use EVOO, or coconut oil)
- 1 pot
- Lightly pan-fry ingredients in pot
- Add 2.5 cups of water or broth of your choice
- Bring to a boil
- Cook for 10 mins
- Blend and season as needed
*SWM Tip // add cilantro and green onions when serving for the additional nutritional value and flavor // add your favorite herb like astragalus root powder or superfoods at the very end // feel free to add any pre-cooked veggies to the soup to make it a bit more hearty
